Salmon + Asparagus Bake

Ingredients (4 serves):

1 red onion, finely sliced

2 large potatoes, washed but leave the skin on and cut in half and then finely sliced

3 cloves garlic, crushed

4 pieces fresh salmon

1 bunch asparagus, woody ends trimmed

1-2 lemons or limes, rind grated and juiced

olive oil spray, black pepper and dill (fresh or dried), to taste

green salad and/or brown rice, for serving

Method:

1. Preheat oven to 180 degrees Celsius (moderate oven).

2. Mix onion and potatoes in a large baking tray or baking dish. Spray lightly with olive oil, add some ground black pepper and dill. Bake for approximately 20 minutes.

3. Stir potatoes and onion gently. Then add the salmon and asparagus on top. I like to nestle the asparagus in between the salmon pieces.

4. Lightly spray with olive oil and sprinkle on more pepper and dill (if you like it) and grated rind and juice from the lemons/limes. You could also add some dried or fresh chilli and fresh cherry tomatoes now too.

5. Bake for approximately 15 minutes more or until cooked to your liking.

6. Serve with green salad and/or some brown rice plus lemon/lime wedges. Enjoy!
